Thistles are a group of plants that belong to the daisy family and are characterised by prickly stems and leaves, with a rounded head of often purple flowers. Classified as a weed they are regularly eradicated making this variety of honey extremely difficult to source.
The pale and sweet blue thistle honey is beautiful in tea or as a sweetener on greek yoghurt.
