Also known as the Yellow Star thistle which originated in Europe, St Barnaby’s thistle is a single flower honey that has a yellowish greenish tinge and is mild in taste, comparable to a light clover honey. It is slow to crystallise and has a sweet aftertaste. Very popular in Italy where it is paired with Gorgonzola Dolce. Also a perfect sweetener for tea.
